Low Carb Breakfast Roll Up
Instructions
  1. In a small skillet on low heat ½ tsp preferred cooking oil
  2. Place tortilla in skillet and warm on both sides.
  3. Remove and set on plate.
  4. Place turkey in the skillet and warm on both sides.
  5. While turkey is warming, crack 2 eggs in a bowl and whisk in salt and pepper.
  6. Blend well.
  7. Remove turkey slices and place 2 pieces on top of each warmed tortilla.
  8. Add ½ tsp preferred cooking oil to skillet.
  9. Once coconut oil is melted, pour egg mixture into skillet.
  10. Scramble egg mixture.
  11. Place equal parts scrambled egg mixture on each tortilla.
  12. Sprinkle cheese on top of eggs.
  13. Roll and enjoy.
