In a Dutch Oven, brown the sausage and drain the fat. Add the onion, peppers, and sauté until cooked. Add hash brown potatoes and brown a little.
Mix eggs and a little milk until well blended and pour on top of the mixture in the Dutch Oven. Place lid and bake for 20 to 30 min, until the eggs are cooked.
Sprinkle with Cheese and bake for 5 to 10 min more.
